Larder weight is the gralloched carcass as it goes into the chiller — head off, legs removed, in fur, the convention the Deer Initiative Partnership / BASC cull records guide asks for. Whichever way you weigh, weigh the same way every time: mixed conventions cannot be compared across a season, or against anyone else’s figures. Typical larder weights — roe 12, fallow 22, sika 24, red 47 kg.
